Lamington Cupcakes

Batter
- 240 g flour
- 200 g sugar
- 75 g cocoa powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup coconut milk
- 1/2 cup coconut oil
- 1 tbsp coconut extract
Topping
- 200 g dark chocolate melts
- 200 g shaved coconut (use desiccated for a more traditional look)
Sift dry ingredients together
Whisk eggs, milk, oil and extract
Add dry ingredients to wet in increments, mixing well until smooth
Divide batter equally into cupcake molds
Bake at 180* for 8 to 12 minutes or until a skewer inserted in the middle comes out clean
Melt dark chocolate in microwave in increments of 30 seconds, mixing well in between
Dip top of cupcake into the dark chocolate
Sprinkle shaved coconut on top
